Day 20: Cucumbers & A Favorite Recipe

Consider eating more cucumbers. They are so great for you.


Cucumbers are high in the electrolyte potassium. According to the American Heart Association, they may reduce sodium-induced water retention and lower blood pressure.


Cucumbers are 95% water and high in fiber. They are also high in Vitamins C & K, Magnesium, Potassium and Manganese.

We love this favorite Guarino family recipe. It's a great way to keep summer with you all year-round.


1 pound of tomatoes (about 3), slice them about 1/4-inch thick

fresh mozzarella cheese, sliced into rounds

2-4 cucumbers, peel and slice

Extra-virgin olive oil

Balsamic vinegar

ground black pepper

fresh basil leaves or dried basil


Arrange the tomato slices on plate or platter. Put the mozzarella and cucumbers over the tomatoes. Add olive oil and/or vinegar.

Sprinkle with pepper and basil.
